Healthy Snack Recipe: Warm Italian Bruschetta with Tomato and Basil

This warm and satisfying snack is perfect for a relaxed weekend afternoon. Packed with vibrant Italian flavours, it's simple to make and fits beautifully with The Britalian Diet.
Ingredients (Serves 4, ~190 calories per serving)
8 slices of wholemeal or sourdough bread (~40g per slice)
300g cherry tomatoes, halved
1 clove garlic, finely chopped
1 tbsp olive oil
1 tsp balsamic vinegar
A handful of fresh basil leaves, roughly chopped
Salt and pepper to taste
Method
Prepare the Tomato Topping:In a medium frying pan, heat the olive oil over medium heat. Add the chopped garlic and sauté for 30 seconds until fragrant (be careful not to burn). Toss in the cherry tomatoes and cook for 4–5 minutes until softened and slightly blistered. Remove from heat and stir in the balsamic vinegar, basil, salt, and pepper.
Toast the Bread:While the tomatoes are cooking, lightly toast the bread slices in a toaster or under a grill until golden brown.
Assemble the Bruschetta:Spoon the warm tomato mixture generously onto each slice of toast. Drizzle with a little extra olive oil if desired and serve immediately.
