This Lemon & Garlic Prawn Spaghetti brings together fresh Mediterranean flavours, light but satisfying ingredients, and a touch of indulgence—ideal for a relaxed evening. Lemon & Garlic Prawn Spaghetti

Ingredients:
150g whole wheat spaghetti
200g raw king prawns
2 tbsp extra virgin olive oil
3 cloves garlic, finely chopped
Zest and juice of 1 lemon
½ tsp dried chilli flakes (optional, for heat)
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
20g grated Parmigiano Reggiano (optional)
Method:
Cook the pasta: Bring a large pot of salted water to a boil and cook the spaghetti according to the packet instructions. Reserve ½ cup of pasta water before draining.
Sauté the garlic: In a large pan, heat the olive oil over medium heat. Add the garlic and chilli flakes (if using) and sauté for about 30 seconds until fragrant.
Cook the prawns: Add the prawns to the pan and cook for 2-3 minutes per side until pink and opaque. Season with salt and black pepper.
Combine: Add the drained spaghetti to the pan along with the lemon zest and juice. Toss everything together, adding a splash of the reserved pasta water to loosen the sauce if needed.
Finish: Stir through the chopped parsley and adjust seasoning to taste.
Serve: Divide between two plates and top with grated Parmigiano Reggiano if desired.
